Nothing says summer like great big juicy blackberries! After eating your fill of fresh blackberries, it’s time to make a beautiful crisp! We’ve made ours with our favorite homemade granola for our topping and Agave for sweetness. We’ve topped ours with whipped coconut cream that was flavored with Vanilla bean paste and Agave. This dish is so light and refreshing and tastes like summer!!
Recipe:
Toss together in a bowl, but leaving the berries whole…
4 cups of fresh blackberries
3 TBLS flour
2 tsp cinnamon
1/4 cup Agave
Zest of 1 lemon
Juice of 1/2 lemon
Place mixture in an 8 x 8 baking dish.
Top blackberry mixture with 1 1/2 cups of your favorite granola recipe. (We used a recipe from @jennyevansgatherings)
Optional – Grate 2 TBSP butter over granola.
Bake at 350 for 40 minutes.
Whip cold coconut cream in mixer with whisk attachment until desired consistency. Add 1 tsp vanilla bean paste and Agave to taste. Serve over warm crisp!
