Have you ever wondered what to do with the seeds from your papaya? Those are the types of questions that keep me up at night! Wonder no longer! After you scrape them out of your papaya lay them out on cookie sheet lined with a silicone mat or parchment paper and dry them in an oven at 100 – 150 degree oven until they resemble a pepper corn. This usually takes a couple of hours. When they are dry, grind them up in a Garlic Twister (available at Kelly’s Kitchen Store) or in a pepper mill. They will look and taste very similar to pepper and can be used just like pepper. It’s great as a finishing pepper. Try it on a cracker spread with a soft cheese and perhaps a sweet fig or orange jam. It is also great on a salad!
